TONIGHT: Rain with a thunderstorm or two this evening, followed by a few showers overnight. Low 46F. Winds NNW at 5 to 10 mph. Chance of rain 90%. Rainfall around a quarter of an inch.

Volunteer Opportunity at Rikki’s Refuge!
 Is there anyone in the Fredericksburg, VA. area that can HELP us haul produce? We need some volunteers! Also...mileage can be claimed on taxes when you are assisting a registered non-profit! It's approximately 25-30 miles round trip and we need this weekly. A large pick-up truck or trailer would work best. Please contact Rikki's Refuge at: or call 540-854-0870. Please leave a voice mail if no one picks up, the office isn't always manned!

2 medium zucchini, quartered and cut into large pieces
4 medium potatoes, peeled and cut into large chunks
1 medium red bell pepper, seeded and chopped
1 clove garlic, sliced

1/2 cup dry bread crumbs
1/4 cup olive oil
paprika to taste
salt to taste
ground black pepper to taste
Preheat oven to 400 degrees F (200 degrees C).
In a medium baking pan, toss together the zucchini, potatoes, red bell pepper, garlic, bread crumbs, and olive oil. Season with paprika, salt, and pepper.
Bake 1 hour in the preheated oven, stirring occasionally, until potatoes are tender and lightly brown.
