CRANBERRY OATMEAL SQUARES
2 cups old-fashioned oats
1/4-1/2 cup organic brown sugar (more or less to your personal taste)
2 tsp. cinnamon
2 tsp. baking powder
1 tsp. salt
2/3 cup dried cranberries (or try with dried cherries!)
1 cup nondairy milk
1/2 block silken tofu
1/2 cup natural applesauce
1 tsp. vanilla extract
Toppings: any nut butters, any fresh/sliced fruits, berries
Preheat the oven to 350ºF. In a large bowl, combine the oats, sugar, cinnamon, baking powder, salt, & cranberries. In a blender or food processor, combine the nondairy milk, tofu, applesauce, & vanilla & process until smooth. Add the wet ingredients to the dry and mix well. Spread the mixture into an 8×8-inch pan that has been lightly coated with cooking spray & bake for approximately 40 minutes. Cut into squares & serve with desired toppings.

Our dryer broke today. Fortunately it was a fair day outside and we were able to air/sun dry bedding and such. We can get a used/refurbished dryer for $125.00 if anyone can help us with that. Please donate if you can:
